Honey Cinnamon Skillet Roasted Nuts












If you're looking for super sweet German Roasted nuts like you see at the mall, these are not them, but they're still really good and much healthier than the sugar-coated version. These nuts are pan-roasted and candied using honey and cinnamon. If they're not sweet enough for you, you could probably add some sugar but I like that these aren't too sweet. So if you are looking for a low-sugar version of your favorite cinnamon roasted nuts, here it is!

2 cups nuts (I used 1 cup pecans and one cup walnuts)
1/4 cup honey
2 tablespoons coconut oil, separated
1/2 - 1 tablespoon ground cinnamon


Add 1 tablespoon melted coconut oil to a small mixing bowl. I used a metal bowl so I ended up just melting my coconut oil in the bowl by placing it in my skillet while it heated. Then add the honey and cinnamon and mix well. Add the nuts and stir until all the nuts are well-coated.

Add the other tablespoon of coconut oil in a cast iron skillet over medium-high heat. Once the oil is hot, pour the nut mixture into the pan.
Stir often!
The honey and cinnamon will seem to melt off the nuts a little. That's ok! Keep stirring until the honey mixture starts to thicken and darken slightly. When this happens, transfer the nuts to a lined baking sheet to cool. Try to spread the nuts out as much as possible so they don't stick together. Once they've cooled, the honey cinnamon coating will harden into a candy shell.

Be careful not to let them burn. It's really easy to do. I actually burned this batch just a little. Jordan and I laughed about it later because I was wanting to take them off the burner but he was convinced they weren't done roasting yet because he couldn't smell the "roastedness" as he put it. So I left them on longer and...yeah, some got a little burned. Lesson learned. Don't wait until you think they smell roasted! They were still pretty good though and there were still a lot of un-burned ones too.
